in this PR, there are the following upgrades:

Added environment variable in the Dockerfile, with the default value to STAGE=local
Express version updated to version 4.17
Added prom-client dependency (version 14.0.0)
Removed parser and replaced with express.json()
added Prometheus client code
change the default port to 8080
added the /metrics endpoint to work with Prometheus
removed "parser" from all the old routes
