Upgraded project dependencies, including Ktor, Kotlin, and HikariCP, to the latest versions. Refactored Server-Sent Events (SSE) handling to use built-in Ktor SSE features and updated the method for connecting to the PostgreSQL database. Also, modified the layout and styles to align with the updated dependencies.

Hello! I found this little demo and though I'd contribute a few updates as Ktor 3.0 is out.
I have upgraded the dependencies to Ktor 3.0 and latest Kotlin (2.0.21) along with some other dependencies
In Ktor 3.0 we added support for SSE and it simplifies this example a bit. Though, this specific use case is better suited for WebSockets, it seems.
