Update README to clarify automatic generation

I was given the task of updating the definitions in this repo. This turned out to be the wrong thing to do for a number of reasons, but it took me a few minutes to work out the workflow for this repo. Which is to say, it does everything itself and tracks only mainnet (until #1 probably changes things).
