have taxonomy format -> Metadata transformers infer column types

Improvement Description
The current transformers for the various taxonomy formats -> Metadata load every column as dtype=str, making the column types categorical. It'd be useful to have the transformers infer numeric columns (e.g. Confidence scores are a common numeric column) and otherwise leave things categorical.
