why a new template?

Do we need a new cookiecutter template? Can't we extend https://github.com/pySTEPS/cookiecutter-pysteps-plugin ?

We could potentially extend the original by adding a new user input parameter where the user selects their desired plugin template (io, diagnostic, nowcast etc.) from a list. However, I'm not sure how the cookiecutter design using the project_name and project_slug would react to having multiple options. I can attempt to extend the original if you would prefer that approach?
