Ingredients
4-6 Sausages
3 Carrots
2-3 Handfuls of baby potatoes
1 Red Onion, quartered
Tenderstem
Green beans, halved
1 tbsp Thyme
1 tbsp Paprika
1 tbsp Garlic granules
Salt and pepper to taste
1-2 tbsp olive oil
Balsamic vinegar
Hot honey (optional)
Method
Heat the oven to 180C. Slice up all your vegetables, nice and chunky. Then add all the vegetables apart from the tenderstem and beans into an oven proof dish.
Cover in the olive oil and then season with the thyme, paprika, garlic granules, balsamic vinegar, salt and pepper.
Top with the sausages and optionally squeeze over the hot honey.
Cook for 30 minutes before removing from the oven. Add in the tenderstem and green beans, turn your sausages and toss the vegetables with a little more oil is needed. Add back into the oven for another 10-15 minutes.
Serve, with a little more hot honey and chilli flakes!
