Review existing documentation and pull together into easy to navigate docs.

put detailed docs in ./docs folder
provide links to docs from the root readme.md
Add the following:
- describe how the listener works from a high level
- review / update running backend
Describe the various jobs that are defined in scripts
- how executed / scheduled
