if we add options -o password=SECRET to bareos-fuse.py - this password we will see in proccess list by ps aux|grep bareos - this is not secure.

It is true, that this have to be changed before using bareos-fuse in production. However, the current status is "prototype". I'm not sure, how often this software is used, as I don't receive much feedback. Are you an active user of bareos-fuse?

I try it, because it is more simple for my coworkers.

It is will better if it is will can restore file by simple copy file from fuse. I understand, that it is not easy - we need tell bareos which files we want to resore before "copy".
